In 1956, Joe Cutler approached Corralitos Market owner Jim Prendergast and asked to rent out the country store’s smokehouse. A year later, Cutler purchased the business and inherited the store’s history, which dates back to 1896. Upon the ownership change, the name was changed to the Corralitos Market and Sausage Company to reflect the addition of smoked products to the business.
A Sacramento native, Cutler had moved his family to Corralitos shortly before purchasing the business. His childhood friend from Sacramento, Don Peterson, eventually relocated to the area with his family as well. Dave Peterson, Don’s son, began working in the kitchen as a cleanup boy at the age of 15 in 1975. As the business continued to grow, Dave began an apprenticeship under Cutler, learning to cut and process meat. Upon his graduation from Aptos High in 1978, Dave went to work full-time in the kitchen.
The business was incorporated in the 1980s. In the early 1990s, Cutler decided to semi-retire, and Dave took over the meat department. Cutler retired in 1995, but remained active in the business until his death in 1997. Although Dave took over ownership in 1997, a board of directors, which includes Cutler family members, continues to help run the business. The 5,500-square-foot store has 22 employees, a number of which have worked for the market for more than 30 years. The business, which prides itself on its customer service, encourages feedback from its customers, of which approximately 75 percent are considered regulars.
The Corralitos Market and Sausage Company first joined the Monterey Bay Certified Farmers Markets [MBCFM] in 1995, when it set up a large tent and wooden display cases at the Aptos market. The business joined the MPC market in 1997. MBCFM sales annually account for 10 percent of the company’s total sales. The business has a presence at MBCFM each year from mid-March through October.
At the Corralitos Market and Sausage Company, the focus is on producing a quality product, rather than on quantity of product. U.S. government-inspected quality meat and poultry products are purchased from companies familiar with the store’s high standards. The market, which offers nitrate-free products with no fillers, takes part in a strict state inspection program, which includes a weekly inspection of its kitchen and smokehouse. The business is a member of the California Association of Meat Processors [CAMP], from which it has won numerous awards for its smoked and fresh products over the years.
Smoked sausages: Kobasica: pure pork with fresh crushed garlic, salt and pepper; German Sausage: a medium-seasoned combination of beef and pork with garlic and cracked pepper; Bavarian Sausage: a mild and sweet combination of beef and pork; Buffalo: Cajun-seasoned buffalo meat; Cheezy Bavarian: beef and pork sausage with sharp cheddar cheese; Jalapeno and Cheddar: beef and pork sausage with sharp cheddar cheese and jalapeno peppers; Linguisa: spicy Portuguese all pork; Smoked Country Sausage: all pork seasoned with sage; Smokey Hot Link: all pork with chili powder, chili flakes and jalapeno peppers; Creole: all pork with mild spice and bell pepper, onion, garlic and tomato; Lamb Links: lamb with garlic, pepper and curry; Turkey: both medium spice and Andouille selections; Andouille: pork with thyme, allspice, cayenne chili powder and sage; Cheesy Andouille: pork with cheddar cheese and Andouille spice; Ostrich Sausage: ostrich meat seasoned with Kobasica recipe; Venison Sausage: venison meat seasoned with German Sausage recipe; Pepper Jack: a spicy combination of beef and pork with pepper jack cheese, crushed chili and jalapenos; and Chicken Santa Fe: a spicy combination of lean chicken and turkey with cilantro and sweet red peppers.
Fresh and frozen sausages: Breakfast Sausage: link or bulk with no preserving agents; Italian Sausage: an all-pork chunky grind with spices including fennel flavoring; and Chick ‘N’ Apple: a combination of lean chicken and turkey with fresh apple, cinnamon, nutmeg and sage.
