History/Philosophy: The Corralitos Market and Sausage Company has been in operation for over 40 years in the same location in the Santa Cruz Mountains of Central California. The market is nestled in the heart of the Pajaro Valley apple country, where the apple wood for smoke and the fresh ocean air combine to create a clean, unspoiled atmosphere ideal for true smoked products. All of their products are smoked and cooked naturally with no additives or fillers. They use only USDA inspected beef, pork, lamb and poultry.
